Its about time a manufacture designed a griddle with a little room for flipping and turning. This griddle has an amazingly large (actual cooking surface)this is about as close to a commercial size, for in home use griddle, your going to find. I just recently purchased the Presto 22" griddle, and it works very well. However, it has a limited cooking surface area. Whereas, when I took this "BIG" Tilt N Drain model out of the box. I just said "WOW" now this is what I've been looking for. I've read a few comments, regarding the size (storage) as well as issues with uneven heating. As for the size, its just what I've been looking for. As for storage, well if your looking for, and need a "BIG" griddle, you'll figure out a place to store it. Now, as for uneven heating. This griddle needs ample time to heat, in order to maintain an even surface temperature. As with any electric appliance that has a (calrod coil) the area directly under the coil will be a hot zone, every time the coil cycles on and off. So, a good 10-15 minute preheat, should reduce the coil on/off cycling. Therefore, reducing hot spots and scorching. Also, keep in mind, since the thermostat reacts to changes in temperature, thus causing the coil to heat. Foods, eggs and batters closer to room temperature placed on the griddle. Will be less likely to cause the thermostat & heating element (calrod coil) to cycle on and off for long periods of time.
